Stuffed Avocados |
Ingredients:
• 2
Avocados, halved and stoned
• 2 tomatoes finely chopped
• 1 tablespoon sweetcorn
• Half red pepper, finely chopped
• 1 clove garlic, crushed
• juice of half a lemon
• olive oil
• salt and pepper
• 1 tablespoon of pine nuts
Method:
Combine the tomatoes with the sweetcorn and red pepper in a bowl.
Make a dressing of oil, lemon juice, garlic,salt and pepper and pour this over the salad vegetables stirring well.
Heap the mixture on to avocados and sprinkle the pine nuts on top. Serve with large green salad.
